Banana Flour Muffin

These banana flour muffins are wonderfully fruity. they are so delicious and so moist because of the berries. I made these on a whim just to use up fruit but now the recipe is a keeper. They are quick to make and you can substitute the fruit for any other of your choice.

Ingredients

• 75g of caster sugar
• 150g of banana flour
• 75g of milk
• 75ml of oil or melted butter
• zest of 1 lemon
• 1 medium egg
• 2 tsp baking powder
• ¼ tsp of salt
• 75g of raspberries
• 75g of blueberries

Banana Flour Muffins

Method

  1. Preheat oven to 170°C (160° fan oven), gas mark 4.
  2. Line a muffin tray with paper cases
  3. Sift the flour and baking powder into a bowl and add the sugar
  4. In a separate bowl whisk the egg, lemon zest oil and milk until frothy
  5. Pour the egg mixture to the flour and fold it in. add the fruit and fold that in too
  6. Use a spoon to put the mixture in the muffin cases
  7. Bake in the oven for 20 min.
  8. Cool the muffins completely on a wire rack
  9. Enjoy!
