I tell you these pancakes are a firm favourite in my family! Everyone loves them. And because they are so quick to make it is not too much work for me.
This recipe makes really delicious pancakes that are fluffy and light.
They are the real thing. Please try them.
Makes 4 pancakes
Golden syrup or runny honey to serve
Sift the flour, salt and baking powder into a mixing bowl.
Whisk the egg and milk together and then add in the melted butter.
Make a well in the flour and pour in the milk egg mixture and whisk until smooth
Stir in the blueberries
Heat a little butter in a frying pan
Drop a tablespoon of batter into the frying pan and cook for 2 to 3 minutes on medium heat then turn them over and cook the other side for the same time.
If you have a large frying pan you might be able to fry two pancakes at the same time.
Otherwise cook one at a time. I usually turn on the oven to low so I can keep the pancakes warm while I cook the rest.
Serve the pancakes drizzled with honey and or syrup and extra blueberries
